A St. Patrick’s Day Tradition – with a Hop Valley Twist!
St. Patrick’s Day is a pretty big deal to us here at Hop Valley headquarters. Each year we work hard to brew an Irish Red-style beer to serve at our two locations (Read about this year’s Irish Ale here). We also honor the holiday by serving up traditional St. Patrick’s Day dishes, like corned beef and cabbage – because it’s just not St. Patrick’s Day without some corned beef and cabbage. If you can’t join us for dinner, put a twist on this classic dish right in your own kitchen. We’ll even share a secret ingredient to liven up this St. Patty’s Day: Light Me Up Lager
- 8 carrots
- 4 pounds of corned beef brisket w/ spice packet
- 1 can Light Me Up Lager
- 2 c. water (or enough water to cover beef and vegetables)
- 8 baby red potatoes
- 1/2 head of cabbage
- Add an onion if you’re feeling fancy!
Chop carrots into thirds. Cut Red potatoes into fourths. Add all ingredients to slow cooker (except the cabbage), placing meat on top of vegetables. Add spice packet on top of meat. Cook on high for 8 hours. Add the chopped cabbage to pot and cook for 45 minutes (or until tender). Serve with a glass of beer (hold the green dye) and enjoy. Slàinte!
